Spicy Tomato & Orange Smoothie
Summer is the season for sweet corn, sun-ripened tomatoes, and countless outdoor shindigs. And, let’s be real—bacon is always in season.
Once the outdoor cooking season kicks off, it only makes sense to combine avocados and tomatoes with the smoky sweet flavors of charred sweet corn and bacon. You’ve been forewarned, this guacamole will be on heavy rotation.
115 g/4 oz ripe tomatoes (peeled if preferred), roughly chopped 2 spring onions, trimmed and chopped 150 ml/5 fl oz orange juice Tabasco sauce, to taste crushed ice chilled mineral water (optional) fresh basil sprig, to decorate.
1 Put the tomatoes in a smoothie machine or blender. Switch on and with the motor running add the spring onions and the orange juice. 2 Add a few dashes of Tabasco sauce and continue to blend for 1 minute, or until smooth. 3 Half-fill a tumbler with crushed ice then pour over the juice. Top up with some chilled mineral water, if liked, then decorate with a basil sprig and serve.
