Summer is the season for sweet corn, sun-ripened tomatoes, and countless outdoor shindigs. And, let’s be real—bacon is always in season.
Once the outdoor cooking season kicks off, it only makes sense to combine avocados and tomatoes with the smoky sweet flavors of charred sweet corn and bacon. You’ve been forewarned, this guacamole will be on heavy rotation.
1 ripe peach, about 115 g/4 oz 1 ripe passion fruit or mandarin 2 tbsp freshly squeezed orange juice 3 tbsp low fat natural yogurt 1 tsp clear honey (optional) crushed ice.
1 Cut the peach in half, discard the stone and slice the flesh. Reserve 1-2 slices for decoration and place the rest in a smoothie machine or blender. 2 Scoop out the seeds from the passion fruit, if using, and add to the peach slices. If using a mandarin, peel and divide into segments and add to the peach. Switch on and, with the kotor running, slowly pour in the orange juice and the yogurt. Add honey to taste, if using, and blend for 30 seconds, or until smooth. 3 Half-fill a tumbler with crushed ice and pour the smoothie over. Decorate with the reserved peach slice and serve immediately.
