Once the outdoor cooking season kicks off, it only makes sense to combine avocados and tomatoes with the smoky sweet flavors of charred sweet corn and bacon. You’ve been forewarned, this guacamole will be on heavy rotation.

4 crisp breads
2 tsp low fat herb-flavoured
cream cheese
55 g/2 oz rocket
1/2 small melon, such as
Ogen or Gallia
25 g/1 oz seedless grapes
2 cherry tomatoes (optional)
85 g/3 oz lean boiled ham,
thinly sliced
4 raspberries (optional)
4 thin slices peeled cucumber
1/4 small apple, thinly sliced


1 Spread the crisp breads with the low fat cream cheese and top with the rocket. 2 Discard the seeds and skin from the melon and cut into tiny wedges. Arrange on top of the rocket and arrange the grapes on top. Sprinkle with pepper and serve. You can vary the toppings using the cherry tomatoes, ham, raspberries and thin slices of cucumber and apple, for example.
