Apple & Raspberry Smoothie
Summer is the season for sweet corn, sun-ripened tomatoes, and countless outdoor shindigs. And, let’s be real—bacon is always in season.
Once the outdoor cooking season kicks off, it only makes sense to combine avocados and tomatoes with the smoky sweet flavors of charred sweet corn and bacon. You’ve been forewarned, this guacamole will be on heavy rotation.
1 eating apple, peeled, cored and chopped 2 tbsp chilled mineral water 55 g/2 oz fresh or thawed frozen raspberries 1 tsp clear honey (optional) 4 tbsp buttermilk or low fat natural yogurt ice cubes.
1 Put the apple in a smoothie machine or blender together with the mineral water and blend for 1 minute. 2 Reserve 2-3 raspberries for decoration and add the rest to the smoothie machine. Blend for 30 seconds before adding the honey, if using, and then add the buttermilk. Blend for a further minute. 3 Place a few ice cubes into a tumbler, pour over the smoothie, decorate with the reserved raspberries and serve.
